Recipe for 6 servings

 

List of ingredients of White Garlic Gazpacho recipe:

  • 500 g (1.10 lbs) breadcrumbs,
  • 100 g (0.22 lbs) peeled almonds,
  • 3 garlic cloves,
  • 1 kg (2.20 lbs) Malaga grapes,
  • 1/2 cup of wine vinegar,
  • 1 cup of extra virgin olive oil, and
  • Salt

 

Preparation of White Garlic Gazpacho recipe:

  • Submerge the breadcrumbs in water until they are soaked, then squeeze the water out.
  • Meanwhile, peel the almonds.
  • Put everything into a mortar and mash it with the garlic cloves until fine.
  • Then add the oil little by little, as if making mayonnaise, until it becomes a paste.
  • Lighten it with water and vinegar until it is a creamy broth.
  • Peel the grapes and remove the seeds.
  • Add them to the broth and season with salt.

 

Ajoblanco is always served very cold.
