Recipe for 10 servings

 

List of ingredients of Anchovies with vinegar and garlic recipe :

  1. 3 cups of extra virgin olive oil
  2. 1 kilo (2.2 lb) anchovies
  3. 2 cups of vinegar
  4. 1 tablespoon of table salt
  5. garlic

 

Preparation of Anchovies with vinegar and garlic recipe:

  1. Wash the anchovies and remove the intestines and the heads.
  2.  Salt and place in a bowl. Add vinegar, cover with a dish and let stand for 4 hours.
  3. Strain off the vinegar, slice lengthwise with a knife and remove the central bone. Immerse filets in vinegar again and let them stand for another 2 hours, until they turn white.
  4. Next, remove from vinegar and place in a glass jar.
  5. Cover with olive oil and store in a cool place or in the refrigerator up to 5 – 6 months.
  6. Add 1 finely chopped clove of garlic in every 2 or 3 servings of anchovies when serving.
